Easter is around the corner! How could you tell? The aisles are lined with artificially colored treats and cute bunny shaped things disguising as chocolate. Ditch the Easter basket this year and make something that will satisfy everyones sweet tooth at the end of the meal and deliver a load of health benefits. Ever thought about baking with your favorite turmeric elixir? Us either, but this is awesome.
Raw Turmeric Easter Chicks and Eggs
1 Ripe Avocado
4 Tablespoons Agave Nectar or sweetener of your choice
2 Tablespoons TumericAlive Coconut Nectar Elixir
1/4 Cup Raw Cocoa Powder
1/4 Cup Almond Meal
1/4 Cup Unsweetened Raw Coconut, shredded
Nuts to decorate the chicks!
1 Cup Cashews or Walnuts
3/4 Cup Pitted Dates
1 Tablespoon Coconut Oil
Spice from one Vanilla Bean
Pinch of Sea Salt
To make the eggs, process the nuts and dates in a food processor. Add the coconut oil, vanilla and salt. Mix to combine into a slightly sticky dough. Refrigerate for 1 hour to harden.
Process the avocado in a food processor until it is smooth. Add the sweetener, Elixir, and cocoa powder. Mix it until it forms a tacky consistency but not too sticky. If it is too soft, then add more cocoa or almond meal. Use a cookie scoop and then roll the balls in the shredded coconut. Enjoy right away or refrigerate for later. I used pine nuts and almonds to decorate the chicks, but you can be creative!
